I mix raw almonds (about 2 cups) with one egg white beaten with about a tsp of sugar, a tablespoon or so of dried herbs (rosemary is a favorite) 2 tsp or so of big grain like kosher salt (less if it's tiny salt) and a dash or so of cayenne pepper. Bake in a 300 or so degree oven until toasty, about 15-20 min. Stir a few times. Best snack ever.
I LOVE almonds. Sadly, one of the bedeviling side effects to the hcg program has been the developing (or revealing?) of allergies to nuts and berries. That, the most unkindest cut of all.
